More Chicken Please

Aunt Doris' Rice has been a favorite in our family for a long time, not to mention a classic potluck dish.  I brought the dish to a work party once and one of the ladies commented that it would be really easy to throw some chicken in to bake along with the rice. TaDa!  Fast, easy and tasty!

thawed chicken breast ( whole or cubed )
1 c uncooked rice
1 c water
1 can beef consume
1 can french onion soup
4 Tbsp butter opt.
salt

heat oven to 350, mix ingredients in casserole dish, bake one hour
*turn chicken after half hour

Phantom of the Opera

The Phantom of the Opera was my absolute favorite part of the trip, and also my birthday present!  The Venetian built a $40 million theatre especially for this Broadway hit.  We sat in the front row and all but lost our eyebrows when the pyrotechnics started!

Silver or Blue?

 This year was a big year for the Schuberts.  We purchased our first house in Rapid City on west St Anne St, which just happens to be within 2 miles of the best elementary, middle and high schools in town.  And after I noticed a large dark spot in my parking space at work, we thought it would be the best thing to put the old Sebring out of his misery and get a new vehicle, preferably before the transmission fell out! We decided on a Mitsubishi Lancer Sportback.  After driving a crossover I knew I didn't want an SUV.  And I wasn't looking for anything very sporty but I did know that I wanted a hatchback, maybe I subconsciously miss the Silver Bullet!  I must be a Car Gal through and through.  And continuing on with the tradition of having a car that is not quite one color and not quite another, this car is called silver but if parked beside a silver car it looks blue.  Click on the pictures to make them bigger and if you look really hard you can spot a big yellow cat in a few of the shots.
